| Breadcrumbs, Panko | 3 Quart | ||||||||
| Coconut, Shredded | 3 Quart | ||||||||
| Margarine | 2 1/2 Quart | ||||||||
| Sugar, Granulated | 1 Tbsp | ||||||||
| Salt | 1 Tbsp | ||||||||

| 1. | Melt smartbalance in bowl. | ||||||||
| 2. | Combine panko, coconut, salt, sugar. | ||||||||
| 3. | Dip each piece of fish
in smartbalance, then panko/coconut mixture, then place on baking sheets. |

| 4. | If there is
panko/coconut left over, top fish with it & drizzle with any leftover smartbalance. |

| 5. | Heat oven to 400 & bake fish until 145 degrees. | ||||||||
| 6. | Serve 4 oz fish per person (about the size of a deck of cards) | ||||||||
